We had the most delicious spinach at dinner and I would love to have the recipe. I haven’t found a recipe yet that is as good as that one. Any help would be appreciated. Thanks.

Grilled Zucchini and Squash Skewers:
Ingredients:

  • 2 medium zucchini
  • 2 medium yellow squash
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • Wooden skewers (pre-soaked in water for 30 minutes)
Instructions:

  1. Preheat the grill to medium-high heat.
  2. Cut the zucchini and yellow squash into 1-inch thick rounds.
  3. In a small bowl, whisk together the olive oil, minced garlic, Italian seasoning, salt, and pepper.
  4. Thread the zucchini and yellow squash onto the skewers, alternating between the two.
  5. Brush the skewers with the olive oil mixture, coating them evenly.
  6. Place the skewers on the preheated grill and cook for about 4-5 minutes per side, or until the vegetables are tender and slightly charred.
  7. Remove from the grill and serve hot.
  8. Zucchini and Squash Pasta:
Ingredients:

  • 2 medium zucchini
  • 2 medium yellow squash
  • 8 ounces pasta of your choice
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish
  • Fresh basil leaves for garnish
Instructions:

  1. Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, spiralize or julienne the zucchini and yellow squash into long, thin strips.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant.
  4. Add the zucchini and yellow squash to the skillet and sauté for about 3-4 minutes until tender.
  5. Season with salt and pepper to taste.
  6. Add the cooked pasta to the skillet and toss to combine, allowing the flavors to meld together.
  7. Remove from heat and garnish with grated Parmesan cheese and fresh basil leaves.
